Crock Cooking

Check local listings but it has been COLD where the Three Broads live. Unfortunately we cannot winter in Myrtle Beach yet (Char and Ed). We will get there someday perhaps. Until then, we survive by making savory meals in our Crock Pots. We firmly believe that a Crock Pot can be used in any season, but there is something about going to work in the cold, dark morning knowing dinner will be waiting on you when you get home.

For this post we are going to share one of our favorite Crock Pot recipes though we have many.

Hilary’s Recipe – Tortellini and Sausage Soup

I was inspired to make this soup because of a lunch that was provided at school. I came home that night and searched Pinterest for a recipe that was a close to the same as I what I ate that day. I found one on Chew Nibble Nosh. The only change I made from the recipe was to use pork sausage instead of turkey. I only made that change because I was already passed the turkey section in the store (call me lazy, but I hate backtracking in the grocery store). Next time, I may use the spicy pork sausage just because it could use that little kick. If you do not have spice-lovers in your family though, it still tastes delicious with regular flavoring. Beware this recipe makes a lot. It lasted my husband and I three meals. Enjoy!

Addie's Recipe - Chickpea and Barley Risotto

As a vegetarian I get OVER excited about comfort food with no meat and this meal is PERFECT! This combined so many fresh flavors and was super easy to put together. The recipe could easily be adapted to add whatever you want to it...your veggie options are truly limitless. This really hit the spot on a cold night and I have tons of leftovers for my lunch this week. I am even freezing a couple of servings for later. I found this recipe through PInterest and it came from an absolutely delightful blog that I am now addicted to! A win-win!! Find this recipe at: Foxes Love Lemons. (Seriously, what a great name!!!) Shannon's Recipe- Chicken and Dumplings

I think it is fair to say that I am the least accomplished cook of the three broads. For my active family the key to a successful meal is that it is ready when everyone walks in the house after work or practice and that it is filling. This chicken and dumplings recipe from Stacey at Southern Bite does all of that and MORE! When I told my husband that I was trying to make this, he advised against it because his mother and grandmother had brought him up with only the finest dumplings ever made! Upon trying this delightful dish, he apologized. This traditional Sunday comfort meal hits the mark on so many levels. First, it is EASY. Second, it is GOOD. Third, it is FILLING! One hint: My husband loved the dumplings so much that next time I will double that portion of the recipe! Have fun making this incredibly easy dish. I promise that it will become a winter staple to your crockpot cooking!
